Our Projects: The Soul of ANDAR

This is not what we do on the side. This is why we exist. Scroll to discover the covenant we keep with Argentina's land, people, and future.

The Lavender Field Experiment: A Quiet Revolution

We have embarked on a multi-year agricultural experiment: replacing soy monoculture with sustainable, high-value lavender. On one hectare of land, we are proving an audacious hypothesis: that 10 hectares of lavender can generate the same economic return as 100 hectares of soy.The Impact of this Proof of Concept is Immeasurable:Economic: It offers local farmers a profitable, sustainable alternative to deforestation for soy.
Environmental: It protects biodiversity, enriches the soil, and requires far less water and no pesticides.
Cultural: It preserves the pastoral landscape and creates a new, aromatic heritage.
If successful, this model has the potential to save vast tracts of native forest across the country. Our small field is a seed for a much larger change. The future export of our essential oil will be the ultimate validation of this vision.

Preserving the flavor of memory: one recipe at a time.

In a world of fleeting trends, the most profound flavors are those whispered through generations. Our Living Recipe Archive is a quest to safeguard this culinary heritage before it fades into silence. The Guardians of Flavor.
We seek out the eldest matriarchs in the communities we visit—the true guardians of Argentina's gastronomic soul. We sit with them, we listen, and we learn.
The Ritual of Preservation.
This is not a simple transcription. It is a ceremony of preservation:
We record the stories behind each dish, the family secrets, the memories tied to each ingredient.
We film their hands—weathered, wise, and skilled—as they knead, fold, and stir. It is a dance of muscle memory, a visual poem of tradition.
We capture the recipe in its most authentic form, free from modern shortcuts.
A Gift for the World, A Treasure for You.
In the spirit of true community, we publish these videos on YouTube for all to learn from and enjoy. This knowledge belongs to everyone.
The recipes, however, are compiled with exquisite care into a physical book—a tangible artifact of this cultural rescue. This book is available for purchase, allowing you to hold a piece of this legacy in your hands. Most importantly, these are the very recipes that grace your table at our lodges. When you dine with us, you are not just eating; you are tasting a story. You are participating in a chain of memory that connects the hands of an abuela in a remote village directly to your plate.

The Algarroba Legacy: An Economy Rooted in Culture

In the heart of Argentina's native forests, the algarroba tree has sustained communities for millennia. Its fruit, a nutrient-rich pod, is a heritage of incalculable value. Today, this legacy faces extinction, replaced by modern monocultures.ANDAR, alongside the [Nombre de la Comunidad Nativa] community, has embarked on our most ambitious mission: to resurrect the ancestral journey of the algarroba, from pod to flour, creating a new, dignified economic engine rooted in tradition. The Process, Reborn.
We are not introducing a new product. We are helping to rebuild a cycle of life:
Ethical Wild Harvesting: We join the community in the sustainable collection of wild algarroba pods, respecting ancient cycles and territories.
Ancestral Milling: Using traditional stone mills, we transform the hard pods into a fine, aromatic flour—the very same that nourished generations.
Modern Integrity: We are pursuing the highest quality certifications and sustainable packaging, ensuring this treasure can reach conscious consumers worldwide.

One Traveler, One Native Tree.

With every ANDAR journey, a new native tree finds its home in Argentine soil. But this is not a distant donation; it is a personal ritual.Your hands, in the earth.
During your journey, you will plant your tree. You will feel the texture of the soil, place the sapling with intention, and connect to this land in a way that transcends a photograph. It is a quiet moment of reciprocity, a living memory that grows long after you return home.

Guardians of the Wild Hive.

Beyond the fields of industrial agriculture, where pesticides silence the buzz of life, we are creating sanctuaries for Argentina's native bees. Our Method is Freedom.
We do not manage these hives; we partner with them.
We place them in pristine, wild locations, far from chemicals.
We provide only the initial home and a queen.
We let them thrive, pollinate, and build resilience as nature intended.
The honey they produce—raw, potent, and untouched by commerce—is a rare gift. We gather it sparingly and it finds its way to your table: drizzled over your morning yogurt, transformed into a delicate confiture, or as the secret ingredient in a dessert. It is the taste of a thriving ecosystem, a flavor you can only find here.
When a hive outgrows its home and the queen migrates to swarm, we reintroduce a new queen, perpetuating the cycle of life and expanding this network of wild sanctuaries.

The Philosophy of Intimacy: Less is More.

In a world of mass tourism, we choose a different path. We deliberately limit our travelers to a maximum of 4 per journey. This is not a limitation—it is our greatest strength. Why?For the Traveler: To ensure a transformative, personal revelation, not a crowded tour.
For the Environment: To minimize our footprint and maximize our positive impact.
For the Community: To foster genuine, respectful connections, not transactional encounters.
This model allows us to offer our private boutique homes as Artists' Residencies during off-peak seasons. In partnership with international art foundations, we connect creators with the raw beauty of Argentina, fostering a new wave of art inspired by its soul.

Thanks!
